SEA URCHIN

Sea Urchins are harvested by ATSSU DIVERS at certain times of the year when the roe inside the Sea Urchin is at a high quality. There are 3 types of Sea Urchins harvested by ATSSU DIVERS

Purple Urchin

These Sea Urchins are predominant on the whole of the New South Wales coast. They are harvested from October to March when the roe as at the highest quality. These Urchins are harvested Live in order to give the consumer the freshest product.

Red Urchin

These sea Urchins are predominant on the whole of the New South wales coast and their roe is the best out of all the Urchin species. They are harvested from February to October but quality species can be found year round. Wholesalers and restaurants purchase these Red Urchins for the premium quality and freshness of their roe.

White Urchin

These sea urchins are common along the New South Wales coast. They are much smaller than the Red and Purple Urchins however their roe is just as nice and a little sweeter. Due to their smaller size they are not commonly targeted by ATSSU DIVERS however small quantities are caught from time to time. They are harvested from October to March.
